This week we are sharing one of Deborah Wray's simple & and family friendly recipes. Leftover Chicken Salad. Deborah's golden rule is to keep the recipe simple as the full flavours of certified organic ingredients means you can. I subscribe to this philosophy. This is such a simple, nourishing & quick recipe. Put it in your menu this week. Enjoy!
Leftover Chicken Salad
100 g lettuce mix
2 cups of cooked chicken diced
2 cups of avocado peeled & diced
¼ cup of olive oil
¼ cup lemon juice
Unprocessed salt (Himalayan, Celtic or similar) to taste
- Place dressing ingredients in a glass jar & shake to combine
- Place lettuce, chicken & avocado into 4 individual bowls in the above order.
- Drizzle dressing over the top of each bowl.
You can also add any other lettuce or vege that is leftover in the fridge
Top each bowl with a dollop of mayonnaise.
Sprinkle each bowl with dill or Italian parsley
This is such a quick nourishing family meal. A great one to keep up your sleeve when time is at a premium.
